D\u00f4kazom jej s\u00fa\u010dasnej zlatej \u00e9ry je viac ako dvesto ocenen\u00ed z n\u00e1rodn\u00fdch, medzin\u00e1rodn\u00fdch a svetov\u00fdch v\u00fdstav. Podlo\u017eie je tvoren\u00e9 mimoriadne v\u00fd\u017eivnou sope\u010dnou vyvrelinou \u2013 <strong>tufom<\/strong>. \u0161pecifick\u00fa kl\u00edmu tvoria okolit\u00e9 Zempl\u00ednske vrchy. \u201eTieto podmienky zaru\u010duj\u00fa zv\u00fd\u0161en\u00fa tvorbu <strong>cib\u00e9b<\/strong> a tvorbu aromatick\u00fdch l\u00e1tok v hrozne tak typick\u00fa pre t\u00fato oblas\u0165,\u201c vysvet\u013euje Barto\u0161.<\/p>\n<p><strong>Cib\u00e9by<\/strong> s\u00fa bobule hrozna, ktor\u00e9 napadla u\u0161\u013eachtil\u00e1 plese\u0148 Botrytis cinerea. Vo vhodn\u00fdch podmienkach plese\u0148 z buniek odparuje vodu, \u010d\u00edm zv\u00fd\u0161i obsah cukru a\u017e o 40 \u2013 60 percent hmotnosti.<\/p>\n<p>\u201eKoncentrovan\u00e9 ar\u00f3my sa premietaj\u00fa do v\u00edna a d\u00e1vaj\u00fa Tokaju unik\u00e1tnu pr\u00edchu\u0165,\u201c dod\u00e1va Barto\u0161.<\/p>\n<p>Ozna\u010dovanie v\u00fdberov 3 - 6 putn\u00ed je dan\u00e9 mno\u017estvom cib\u00e9b pridan\u00fdch do v\u00edna. \u201e<strong>Put\u0148a<\/strong> obsahuje pribli\u017ene 23 kilogramov cib\u00e9b a prid\u00e1va sa do 136-litrov\u00e9ho suda. Mimoriadne ob\u013e\u00faben\u00fd je <strong>De\u0148 otvoren\u00fdch tokajsk\u00fdch pivn\u00edc<\/strong> v septembri. Z ko\u0161ickej \u017eelezni\u010dnej stanice je vypraven\u00fd \u0161peci\u00e1lny \u201e<strong>Tokajsk\u00fd expres<\/strong>\u201c a vin\u00e1rske dedinky s\u00fa prepojen\u00e9 bezplatnou autobusovou dopravou. L\u00edstky na vstup do pivn\u00edc sa zvy\u010dajne r\u00fdchlo vypredaj\u00fa.<\/p>\n<p>\u201eNau\u010dil som sa mnoho o slovenskej kult\u00fare a ochutnal najslad\u0161ie v\u00edna v mojom \u017eivote,\u201c okomentoval prehliadku n\u00e1v\u0161tevn\u00edk z Bostonu, Jackson Simons.<\/p>\n<p>Ko\u0161ick\u00fd regi\u00f3n v\u0161ak nie je iba o Tokaji, ale aj o <strong>V\u00fdchodoslovenskej vin\u00e1rskej oblasti<\/strong> so svojimi \u0161tyrmi \u010das\u0165ami. V porovnan\u00ed s popul\u00e1rnymi oblas\u0165ami z\u00e1padn\u00e9ho Slovenska ich charakterizuje stabilnej\u0161ie po\u010dasie. Rozlohou s\u00fa porovnate\u013en\u00e9 s Tokajom, no vinohrady v nich nie s\u00fa tak\u00e9 koncentrovan\u00e9. Ke\u010f\u017ee ide najm\u00e4 o mal\u00e9 rodinn\u00e9 vin\u00e1rne, je vhodn\u00e9 majite\u013eov na svoju n\u00e1v\u0161tevu vopred upozorni\u0165, pr\u00edpadne si objedna\u0165 ochutn\u00e1vku v\u00edn cez cestovn\u00fa kancel\u00e1riu.<\/p>\n<p>N\u00e1v\u0161tevn\u00edci regi\u00f3nu, ktor\u00ed preferuj\u00fa metropolitnej\u0161\u00ed pr\u00edstup, si za\u010diatkom leta m\u00f4\u017eu vychutna\u0165 celomesa\u010dn\u00fd <strong>Ko\u0161ice Ros\u00e9 Fest<\/strong> alebo septembrov\u00e9 <strong>Ko\u0161ick\u00e9 sl\u00e1vnosti v\u00edna<\/strong>. Oba festivaly nadv\u00e4zuj\u00fa na trad\u00edcie sviatkov v\u00edna, jeho pestovania a v\u00fdroby v regi\u00f3ne. The struggle makes sense when one considers the sweet wine\u2019s global reputation. Louis XIV himself once declared Tokaj to be the \u201cThe king of wins and the wine of kings\u201d.<\/p>\n<p><strong>Slovak Tokaj<\/strong> located in the Lower Zempl\u00edn in the southeastern corner of Slovakia is experiencing a golden age. More than two hundred awards from national and international exhibitions in recent years are sufficient proof. With each trophy on the international stage Tokaj \u201cgets more public attention and prestige,\u201d said Michal Barto\u0161 from the Slovak National Collection of Wine, a salom presenting the country\u2019s best wines. Increased awareness results in increased numbers of foreign visitors for the vineyards.<\/p>\n<!-- \/wp:tadv\/classic-paragraph -->\n\n<!-- wp:image {\"id\":1736,\"align\":\"center\"} -->\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img src=\"https:\/\/www.kosiceregion.com\/wp-content\/uploads\/2019\/05\/vino_flase.png\" alt=\"\" class=\"wp-image-1736\"\/><\/figure><\/div>\n<!-- \/wp:image -->\n\n<!-- wp:tadv\/classic-paragraph -->\n<p>\u201cForeign clientele often come with a brochure in their hands and seek quality wines they have read about,\u201d said Jaroslav Ostro\u017eovi\u010d, owner of family winery <strong>J.&amp;J. Ostro\u017eovi\u010d<\/strong>.<\/p>\n<p>The unique taste of Tokaj is created by the region\u2019s subsoil and microclimate. The subsoil is made of <strong>volcanic igneous rocks<\/strong>, creating a unique blend of nutrients. The nearby Zempl\u00ednske hills create a special climate. \u201cThese conditions guarantee increased production of <strong>cibebas<\/strong> and the formation of aromatics in the grapes so typical for this area,\u201d Barto\u0161 said.<\/p>\n<p><strong>Cibebas<\/strong> are grapes contaminated with the noble rot botrytis cinerea. In appropriate conditions the rotting serves to evaporate water from the grapes, and therefore increase sugar content up to 40-60 percent of weight.<\/p>\n<p>\u201cConcentrated aromas translate into wine and gives Tokaj an exclusive flavour,\u201d Barto\u0161 said.<\/p>\n<p>A labelling ranging from three-six put\u0148as is assigned based on the amount of raisins added to wine as it ages. \u201c<strong>Put\u0148a<\/strong> contains 23 kilos of raising added to 136 litre barrels. Therefore six put\u0148as is the maximum possible amount,\u201d said Barto\u0161.<\/p>\n<p>In order to maintain the quality of the brand, when the grapes are harvested a state supervisor must certify the exclusive Tokaj origin.<\/p>\n<p>\u201cIt is prohibited to mix Tokaj wines with wines from other locations,\u201d said sommelier Peter \u010cechovi\u010d. The law regulates alcohol content and maturation time, as well as limiting the yield. \u201cA one hectare yield can\u2019t be over 9,500 kilos,\u201d \u010cechovi\u010d added.<\/p>\n<p>The actual production process draws on family traditions going back several generations. Harvest is \u201cmanual, staged and gradual, only ripe cibebas are collected\u201d, said Barto\u0161. <strong>Oxidation<\/strong> is used, rather than the more modern reductive way of making wine. Three varieties of grape are typical for Slovak Tokaj: <strong>Furmint<\/strong>, <strong>Lipovina<\/strong> and <strong>Yellow Muscat<\/strong>. Furmint makes up the majority of Tokaj plantings, mainly due its rich cibebas formation, according to Barto\u0161.<\/p>\n<!-- \/wp:tadv\/classic-paragraph -->\n\n<!-- wp:image {\"id\":1737,\"align\":\"center\"} -->\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img src=\"https:\/\/www.kosiceregion.com\/wp-content\/uploads\/2019\/05\/vino_chutnaci.png\" alt=\"\" class=\"wp-image-1737\"\/><\/figure><\/div>\n<!-- \/wp:image -->\n\n<!-- wp:tadv\/classic-paragraph -->\n<p>The easiest way to enjoy this wine micro region is to try out the <strong>Tokaj Wine Route<\/strong>. It is possible to prepare the trip individually, or use services of an agency, which plans trips based on specific requests. The standard route offers cultural and historical monuments, wine bars, taverns, hospitality services and artisans. Villages on the route include <strong>\u010cerhov<\/strong>, <strong>Ve\u013ek\u00e1 T\u0155\u0148a<\/strong>, <strong>Mal\u00e1 T\u0155\u0148a<\/strong>, <strong>\u010cernochov<\/strong>, <strong>Bara<\/strong>, <strong>Vini\u010dky<\/strong> and <strong>Slovensk\u00e9 Nov\u00e9 Mesto<\/strong>. The most popular option is a two-day stay, consisting of sightseeing and wine tasting. Most of the family wineries offer accommodation and traditional Zempl\u00edn or Hungarian food specialities. More active visitors can enjoy golf, bike rental or horseback riding.<\/p>\n<p>However, probably the biggest attractions are the <strong>tours of the wine cellars<\/strong>. Most are covered in thick black noble rot and are reminiscent of an underground labyrinth. Rot may not please the eye, but is essential in the wine ageing process, because \u201cit keeps stable humidity so important for wooden barrels and also creates competitive environment for other undesirable microorganisms,\u201d said \u010cechovi\u010d. The most interesting cellars are located in Mal\u00e1 T\u0155\u0148a, Ve\u013ek\u00e1 T\u0155\u0148a and Vini\u010dky.<\/p>\n<!-- \/wp:tadv\/classic-paragraph -->\n\n<!-- wp:image {\"id\":1733,\"align\":\"center\"} -->\n<div class=\"wp-block-image\"><figure class=\"aligncenter\"><img src=\"https:\/\/www.kosiceregion.com\/wp-content\/uploads\/2019\/05\/vino_zber.png\" alt=\"\" class=\"wp-image-1733\"\/><\/figure><\/div>\n<!-- \/wp:image -->\n\n<!-- wp:tadv\/classic-paragraph -->\n<p>The best time for visits is in September, when the wine is harvested and the area is full of events, festivals and celebrations. The exact timing of the harvest depends on the weather. On <strong>Open Tokaj Cellars Day<\/strong>, a special \u201c<strong>Tokaj Express<\/strong>\u201d departs from the Ko\u0161ice train station with a network of buses also connecting to all the Tokaj villages for free. Tickets quickly sell out.<\/p>\n<p>\u201cI learned a lot about Slovak culture and tasted the sweetest wines of my life,\u201d said Jackson Simons, a visitor from Boston who took a tour.<\/p>\n<p>When it comes to wine in the Ko\u0161ice region, it is not just about Tokaj but also the <strong>Eastern Slovakia Wine Region<\/strong>, which compared to popular regions in the western part of Slovakia is characterised by more stable weather. By sheer size of the vineyards, the region is as large as Tokaj, however they are spread over a much larger area. It consists of four parts named based on bigger cities located close to vineyards.
